How to Make a Palantini.

Okay, when you read the word Palantini, I bet you were thinking this was going to be a straight-up cocktail. But we’re all about flexibility and exceeding expectations over here at Palantir, so I decided to make this both a cocktail AND a refreshing tonic.

This drink is all about the cucumber. I love cucumbers—they’re hydrating, full of vitamin C and potassium, and low in calories, and their distinctive herbaceous flavor pairs well with other flavors. Bonus: They make this drink a pretty lime green that works well with our brand color palette!

  1. Puree together in a blender:
    • 3 nice large cucumbers, peeled, seeded and roughly chopped
    • ¼ cup fresh lemon juice
    • ¼ cup dark agave nectar
    • ½ tsp. kosher salt
    • fresh mint leaves or basil leaves, optional
  2. Pour the mixture through a fine mesh strainer into a big pitcher or measuring cup.
  3. Press the pulp to get all the juice. You’ll end up with about 2 ½ - 3 cups worth.

For the detox version

  • Add 2 quarts water to the mixture, stir and chill for an hour.
  • Serve over ice with additional cucumber or lemon slices for garnish.

For the retox version

  • Hold back a cup or so of the undiluted cucumber puree.
  • Pour one part gin (Hendricks is a nice choice) and three parts strained cucumber juice over ice.
  • Add a splash of tonic for bubbles and garnish with a strip of lime peel, lemon peel, basil or mint leaves.

Special thanks to Alton Brown for the basic agua fresca recipe that I modified here.
